I was given an enormous zucchini last week. It’s about 2 feet long. Like the size of a newborn baby! Any ideas for what I can do with it? I don’t even really like zucchini and I’ve never cooked anything with zucchini in it before.

I like zucchini fried in some margerine with onions and garlic. However, I saw that zucchini at your house, and I think it is too big for that kind of dish – Mom says the big ones are bitter.

Hey Shannon,
Have you used that zucchini yet? I haven’t been on the computer in a week, so that’s why I didn’t respond sooner. You can cut it into quarters, fry it in butter. Then add seasoning salt, a little bread crumbs to thicken, and lots of parmesan cheese. You can add salt & pepper later if you so desire. And threre is your vegetable for supper! Greg & I have been eating a whole zucchini a day for like 3 weeks! You can also throw the fried/seasoned zucchini in an omlette. Good luck!
